Little pig

Porcino, in Italian, means little pig. Nobody can say for certain why a mushroom ended up with that name. The stem is round and fat, the cap is brown, and the Romans were already calling it that. That will do as an explanation.

What is certain is the calendar. Porcini come up with the first rains at the end of summer, and in Italy September is their month. When they are here we leave them alone. Tagliatelle, butter, garlic, parsley, and the mushroom does the rest.

It is the dish of the week that goes fastest. We mention it so you do not leave it until Friday.

A dish named after an opera

Pasta alla Norma comes from Catania, in Sicily. Fried aubergine, tomato, basil. It is not named after anyone’s grandmother.

Norma is an opera by Vincenzo Bellini, who was from Catania too. The story goes that a writer from the town, faced with a particularly good plate of it, said it was “a real Norma”. The name stuck. Nobody can prove the anecdote, but the opera is still being performed.

Little hats

A cappelletto is a little hat. Pasta folded over its filling and closed around a finger, and in Emilia it is eaten in broth, with the family, at Christmas.

This week we take them out of the broth. Filled with cod, set on a courgette cream, with cherry tomatoes and pistachio. North and south on one plate, and nobody has complained.

The risotto does the same the other way round: the speck comes from Alto Adige, right at the top of the country, and the saffron is the one from risotto alla milanese. Two northern neighbours who do not meet all that often.

Coming in

Eat in or takeaway, Monday to Friday from 6:30. On Saturdays we are here from 9:00 to 14:00, as we were before the summer.
