Almost saffron

Last week there was a saffron risotto on the card. The yellow of Milan.

This week the risotto is yellow too. It is not saffron.

In 1280 a Venetian travelling in China came across a root he had never seen. Marco Polo wrote that it had the colour and the smell of true saffron, all its properties, and yet it was not really saffron.

It was turmeric. The name gives it away: it comes from the Arabic kurkum, a word that also meant saffron.

Seven centuries on, the two follow each other on our card, eight days apart.

The turmeric colours the rice. On top go halal meat straccetti. In Italian straccetti means little rags, and the word is used for thin strips of meat, which is a fair description of what they look like. A Parmesan cream finishes it.

The tagliolini

Tagliolini are very thin ribbons of egg pasta. In Piedmont they are called tajarin.

This week they come with salmon and lemon zest.

Two coming back

The fusilli alla Norma were here at the start of September. They return with Primo Sale, a young cheese whose name tells you everything: primo sale, first salt. It is eaten almost straight away, before it has had time to age.

The eliche filled with capocollo are back too, a fortnight after their last appearance. Capocollo is a cured pork neck. This time they sit on a mushroom cream.

And two that never move

The octopus puccia and the halal chicken tagliata have been on the card every week since the end of summer.

At this point they are not really suggestions any more.
