This week’s menu is a journey through authentic Italian flavours, where sea and land meet tradition.

🍚 Risotto, the art of patience

Our Carnaroli risotto with salmon and avocado emulsion sets the tone.
Carnaroli rice comes from northern Italy and is often called the king of risotto rice. It absorbs liquid slowly, keeping its structure.
In Italy, risotto is never rushed. It asks for presence, attention, and respect.
A dish that teaches patience.

🍄 Ravioli, stories of tradition

The ravioli filled with mixed mushrooms, served on potato cream with aromatic breadcrumbs, echo the wisdom of Italian home kitchens.
Breadcrumbs were once used instead of cheese and are still known as the poor man’s parmesan. Not a myth, but a real tradition born from necessity and creativity.

🌊 Trofie, a Ligurian heritage

The trofie with clams, saffron, and cherry tomatoes take us to the Ligurian coast.
Their twisted shape is designed to hold sauces and flavours. A small detail with a big impact, like many Italian culinary traditions.

🥬 Orecchiette, the soul of Puglia

Finally, orecchiette with sausage and turnip tops bring boldness and depth.
Hand-shaped and rooted in southern Italy, they represent a cuisine that is honest, generous, and deeply connected to the land.
