This week's menu in Belval, 12 to 17 October: the octopus cooks in its own water

On Monday we open at 6:30, as we do every week.

And this week the card smells of the sea.

The octopus cooks in its own water

In Naples they say ‘o purpo se coce dint’a ll’acqua soja. The octopus cooks in its own water.

In the pot, it is true. It gives up its water and cooks in it.

But in Naples the phrase is mostly about people. It is what you say when time has to do the work. When you have given someone advice and they have not taken it, you do not insist. The octopus will cook in its own water.

This week it cooks into a ragù, with fusilli. It is also grilled in the puccia, which has not left the card since the end of summer.

A country with no sea

Luxembourg has no coastline.

Our card this week has three dishes from the sea: the octopus ragù, the grilled octopus puccia, and a risotto with mussels, clams and squid.

We will not pretend Belval smells of salt water. At lunchtime at 6 Rue de la Fonte, it comes close.

Bitter

This week’s ravioli are filled with radicchio and scamorza, on a walnut sauce with a few drops of balsamic.

Radicchio is bitter, on purpose. In Italy bitterness is not a flaw to be corrected. They even named what they drink after dinner after it: amaro.

The scamorza, a stretched-curd cheese from the mozzarella family, and the walnuts are there to answer it.

And the mortadella

The maccheroni come with mortadella and sun-dried tomatoes.

Mortadella is from Bologna, so much so that its American cousin is simply called bologna.
