This week, one of our stories takes the shape of spaghetti chitarra with cod fillet, asparagus and cherry tomatoes.
Spaghetti chitarra come from the Abruzzo region. They are cut using a wooden frame strung with metal wires, like a guitar.
When the dough is pressed, it sings softly.
The result is a square-edged spaghetti, rougher than usual, perfect for holding sauce.
Delicate cod, crisp asparagus, sweet cherry tomatoes.
