Risotto, a dish that takes its time

Our Carnaroli risotto with speck and saffron is a dish built on patience.
The rice slowly absorbs the broth, saffron brings warmth and colour, speck adds a gentle smokiness.
In Italy, risotto is never rushed. It is meant to slow you down, even for a short lunch break.

Ravioli, balance and subtle contrast

The artichoke-filled ravioli, served with raisin sauce and Primo Sale cheese, play with contrast.
