In Naples, a paccaro is a slap.
Paccheri take their name from it. They are wide, smooth tubes, and the story goes that the name comes from the sound they make when you eat them.
This week they come with a courgette cream and scampi.
Brasato is Italian for braised. The word comes from embers.
To braise is to cook slowly, covered, over a low heat. The fire has changed since, the idea has not: meat that takes its time.
This week the braised beef fills the ravioli, with a wine reduction and primo sale, a young cheese.
The oyster mushroom’s Latin name, Pleurotus, comes from Greek: pleura, the side, and oûs, the ear.
Its stem does not grow from the centre of the cap but from the edge. And it does not grow in soil: it lives on wood.
This week it goes with tagliolini, cherry tomatoes and a potato cream.
Speck, Gorgonzola and walnuts. Three frank flavours, and the rice to bring them together.
Eat in or takeaway, Monday to Friday from 6:30.
