For the second week in a row, risotto returns to our kitchen. And it feels natural.
Prepared with Carnaroli rice, prized in Italy for its structure and creaminess, this risotto is cooked slowly, with care. This week, it comes with tender salmon, a gently aromatic pistachio pesto and a soft mascarpone quenelle that brings everything together.
In Italy, risotto is a dish of patience. It demands attention. Bringing it back this week means embracing a rhythm. One that values time and flavour.

Eliche stuffed with prawns, tomato sauce and toasted almonds balance sea notes with warmth and texture.
Tagliatelle with beef tenderloin, cherry tomatoes and green pepper recall the comfort of classic trattorias, where simplicity and generosity go hand in hand.
The Paccheri with zucchini cream, buffalo mozzarella and sun-dried tomatoes offer a bright, vegetable-forward plate, softened by creamy notes and gentle acidity.
